As its nickname ‘Lille cannonball’ (or ‘Old Lille’) might suggest, Mimolette is a cheese which comes from the north of France.
Its origins go back to the beginning of the 17th century. Around 1675, France under the reign of Louis XIV, was at war against the Dutch. Jean-Baptiste Colbert, who was at the time secretary of state, decided to stop the imports of Gouda and ask french farmers from the Flanders region to create a similar cheese to cheer the troops up.
To make it distinctive from its Dutch counterpart they colored it orange. First traditionally consumed in the North of France, it now charms the world with its hard texture, nice sharpness and smooth aftertaste.
What is our secret?
Our Mimolette is made from milk which is naturally rich and aromatic, while the cheese matures in dedicated ripening chambers, in the time-honoured, traditional ways.
Its strong orange color is totally natural and comes from the addition of Annato to the milk during the making.
Our level of know-how has been recognised with the award of two “Label Rouge”* accreditations for Mature Mimolette and Extra Mature Mimolette.
By the end of its slow and careful ripening, our Mimolette has acquired a delicious nutty flavour note which makes it the ideal partner for a number of occasions.
Isigny Ste-Mère has a long tradition of making this cheese, which goes back decades. In fact, Mimolette was an early choice of emblem for our co-operative!
Serve it for an aperitif with a well-chilled Rivesaltes or at the end of a meal with a full-bodied Bordeaux red. This delicious hard cheese can also be finely grated, like Parmesan, and used on gratins or savoury tarts or flans.
